STUART IRVING – OWNER, EXECUTIVE CHEF
Prior to the opening Cobre, Stuart Irving had been Executive Chef at Wild Rice in Vancouver. It was there that he created an innovative and unique interpretation of traditional Chinese cooking. Now turning his interests to the technique and flavours of Latin America, Stuart has created a menu that explores the food culture of Hispanic Americas – the areas encompassing South and Central America, Cuba and Mexico.
His respect of and passion for Latin American food, combined with his knowledge of our West Coast ingredients, results in a unique blending of north and south that will redefine how we thing about Latino cuisine.
